Humus Recipe
For months, I've been sending people to this website when they
ask for the recipe for my wife's delicious humus. Today, somebody
pointed out that it wasn't here. So, let's fix that. Here's
the recipe, along with some comments and observations by me:
In food processor or blender, mix
- 2 cans of chickpeas - drain most of the water from the
cans (not all). Some people don't like canned, so they buy
dehydrated chickpeas and soak them. Not much point in
that.
- Extra Virgin Olive Oil 3-to-4 tablespoons. Don't use
canola oil or other oils if you want a real humus taste and
texture.
- Sesame Tahini - 3 tablespoons. You can find this
at most grocery stores in our area, or Trader Joe's has
it.
- Juice of 1-2 lemons. Fresh squeezed is definitely
better.
- Fresh garlic (2-3 cloves)
- Salt (1/2 teaspoon or to taste)
- Cumin (1 tablespoon or to taste)
- Parsley(optional). Add it afterwards on top of
everything.
Turn the machine on. In our Cuisinart, it takes about 5
minutes.
Adjust amounts and time to your tastes.
Spread it on a plate and garnish with paprika and
cumin, chickpeas, and drizzle with olive
oil.
